Lechon Asado (Roast Pork) - very fresh and delicious
Picadillo - a side dish featuring ground beef, potatoes, green pepper onion, and green olives, quite tasty
Platillo Moros y Cristianos - a vegetarian dish, rice and beans
We had Cuban cigars (Rolos) for dessert. We played a little Cuban trivia, visited, and got to know each other better.
The cookbook for next month's recipes will be Abraham Lincoln in the Kitchen A Culinary View of Lincoln's Life and Times by Rae Katherine Eighmey. So far, one person has signed up to bring Almond Pound Cake. There is a very interesting story in the book of Mary Todd and Abraham Lincoln's courtship and the almond cake that she made for him. Back in their day, it was a two day process to make the cake. The February meeting will be on Tuesday, February 27th. We are debating on the starting time, either 6 pm or 7 pm.
In March, we plan on going back to the AtoZ World Foods link and prepare recipes from Ireland. Our March meeting will be on Tuesday, March 27th.
